Newest Addition to Our Clan
This is Libby Kate! She was born at 10:51 AM today to the NOLA bro & my fabulous sis-in-law and weighed in at 7 pounds 6 ounces. And yes, her middle name is after me. How sweet is that?!? Best gift EVAH!!!
Randol's- The Cajun Restaurant
I had the seafood gumbo. I am not a fan of oysters & this is one of the few that I’ve seen that has no oysters in it. It has crab, shrimp, & crawfish. The crab was lump which is quite different from most area restaurants; most use crab claws to cut costs. The roux was deep, dark, & delicious. I expected it to be really thick, but it wasn’t. It was really perfect. I could eat this gumbo every day & never get tired of it. I want to go back & try the chicken & sausage. After 18 or so years of ignoring it, I’m thinking Randol’s may become a regular stop for us.

This was Zandy’s entree- Redfish Randol’s. The fish was perfectly cooked & seasoned. The crispy on the outside, creamy on the inside crab cake was the perfect accompaniment. I would order this for myself next time.

Randol’s is the go to “tourist” joint. Though it’s existed as long as I’ve lived in Lafayette, I’d never been until last night. One of Alex’s co-workers has a son who is in a couple of Cajun bands, and we really enjoy his music. They were playing last night so we decided to go. And I must say, I was very pleasantly surprised by the quality of the food. It was pretty darn good. Below is an appetizer- Seafood Fondue. Packed with cheese & seafood, what’s not to like? Yummy!

Lunch today- “After School” pannini. It’s billed as an “adult grilled cheese”- prosciutto with Havarti & Fontina cheese on foccacia. YUM! Comes with THE most delicious tomato basil soup I’ve ever tasted & a fresh house Italian salad. All for $10! Awesome!

I love this dressing…on EVERYTHING! Fried eggplant, french fries, shrimp salad, fresh cucumber, roasted shrimp, and, uh, salad. :-) It’s a Louisiana product made in Covington, LA. You can find Cousins on Facebook and at cousinsproducts.com. If you live in south Louisiana, look for it at your local Rouses Market. YUMMY!!!

The Joy of Fresh Watermelon Juice
Throw some chunks of watermelon in the food processor. Pulse it up well. Strain it into a container. Put leftover juice in ice cube trays & freeze. When you’re in need of watermelon martinis, throw some cubes in a bowl and nuke them for a few seconds. Shake the juice up with your favorite vodka and a bit of simple syrup. Voilà! The good life!

This is Jen’s favorite band. Living in Columbus, she never gets to see them, so while she was down here in Louisiana, we decided to surprise her by bringing her to see their show at L’Auberge du Lac. She had no clue. We told her we were going for a date night to get a break from the kids & there was some band playing that was supposed to be good. When they came out, she freaked out! She was so excited she started crying. It was AWESOME! Best surprise ever!
